Green Tomatilla Salsa

Salsa has become a mainstream dish, but it actually got its humble origins in Mexico. You may have tried tomatilla salsa before, but if you’ve never made your own fresh salsa, then you’re missing out on a huge amount of flavor. This fresh recipe combines simple ingredients to make an amazing combination of flavors.

8 ounces tomatillas
1 Jalapeno chile
5 sprigs fresh cilantro, chopped
1/4 cup onion, chopped
salt

Directions

With this recipe, you have the option of choosing to make this salsa with raw tomatillas or roasted ones. The herby freshness of the raw salsa or the sweet richness of the roasted option both have a signature tang flavor. Also, the buzz in the jalapeno adds a spicy flavor and all of these flavors add up to a signature condiment that you’re sure to enjoy.

Raw

Chop the tomatillas roughly with the chiles and place in a blender. Combine them with cilantro and a 1/4 cup water and process until the mixture is a coarse puree. Using a colander, rinse the onion under cold water and shake to remove any excess moisture. Stir the onion into the salsa and add salt to taste.

Roasted

Turn on the broiler and spread the tomatillas and chile on a baking sheet. Roast for about five minutes until they are darkly roasted, flipping as needed. Then place both ingredients into a food processor, adding the cilantro and 1/4 cup water. Blend the mixture until it reaches a coarse puree and then scrape out into a serving dish. Rinse the onion in cold water and then shake to remove any excess water. Add the onion to the salsa and add salt to season. Thoroughly combine all ingredients and then serve immediately or store in the fridge.

Chicken Tostadas

Tostadas are what we might think of as small pizzas, but they actually contain a wide variety of fresh ingredients. They’re easy to make and can be personalized to include all of your favorite ingredients. This fresh dish is a great lunchtime or dinner meal, so try these out the next time you’re in the mood for fresh flavors!

Vegetable oil
6 corn tortillas
Salt
3 cups cooked, shredded chicken
1/3 cup lime juice
1/4 cup olive oil
1/4 cup cilantro, chopped
Refried beans
3 oz Monterey Jack cheese
1/2 cup shredded lettuce
1 avocado
2 cups fresh salsa
1/2 cup sour cream
1 scallion

Directions

To make the tortillas, start by pouring about two inches of oil into a large, heavy pan. Place the pan over medium heat and heat the oil to approximately 375 degrees. Add one tortilla at a time and let it fry in the hot oil until it reaches a brown and crispy state, about two minutes. Use tongs to remove the tortilla and then transfer to a pan and sprinkle with a small amount of salt. Set tortillas aside.

To make the topping, combine the chicken, lime juice, oil, cilantro, and salt in a small bowl and mix together. Cover this mixture and then set aside.

The next step involves assembling the tostadas. Preheat the broiler and then spread the refried beans evenly on each tortilla. Sprinkle with cheese and then transfer to a baking sheet. Place the tortillas on a baking sheet and place under the broiler until the cheese has melted and is slightly browned. Remove from oven and divide among six plates.

Add an equal amount of the chicken mixture on each tortilla and then top with lettuce. Then add avocado, salsa, and a small amount of sour cream. Sprinkle with chopped scallion and then serve immediately. This dish is best when eaten immediately after making and the tortillas may become soggy over time. Serve as soon as possible after making for the best results.

We love to use beet juice in a number of different dishes and even ice cream. Have an open mind and discover why you should be incorporating beets and its juice into many of your meals.

Beets have been used traditionally to heal people from various conditions, including fever, constipation, tiredness, and skin problems among others. Yet despite these amazing benefits, not many people eat them, much less drink their juice.

We personally use Breville juicers because of their pure speed when juicing. They are also easy to clean and they look great on our kitchen countertop. But that is just our personal preference.

If beet juice does not sound too pleasing by itself, you can add different fruits like strawberries or lemons to help mask the taste while still getting all of the health benefits.

They are great for people who live in small homes or apartments with cramped kitchens because of their small size and the fact that they do not consume as much power as a regular oven or a microwave. They can also give that perfect toast and crisp that you won’t get with your sophisticated microwaves. Here are a few toaster oven recipes that you can easily whip up with an ordinary toaster oven.

S’mores

This is perhaps the easiest thing you can make with a toaster oven. Assemble the ingredients as usual, starting with the graham cracker at the bottom, a piece of marshmallow, chocolate and leave the top cracker off to melt the filling. You can even add a few layers of the same ingredients for taller S’mores. Lay them out on a baking sheet and pop them in the oven. Remove the pan as soon as the marshmallows start to melt and become golden brown.

Breakfast pizza

You can cut up a frozen pizza dough or old bread, slather tomato paste and add basil leaves, slices of pepperoni, egg and other toppings that strike your fancy and slide them in on a small baking sheet. You can create quick breakfast pizzas by putting fried eggs as toppings along with slices of bacon.

Greek Frittata

These are healthy and super easy to whip up. You can use whatever you have in the pantry, but for a distinct Greek flavor you can try adding feta cheese and a few pieces of olives. Mix in the usual ingredients such as eggs, cream, oregano and salt and pepper in a skillet, adding onions, spinach and pour the egg mixture over the ingredients. transfer the skillet to the oven and broil for a few minutes to lightly brown the top.

Toaster oven cake

A toaster oven cake is easy to make and something that is fun to make using a simple toaster oven. You will need a cup of flour, a pinch of salt, a teaspoon of baking powder, 2 eggs, a cup of sugar and half a cup of milk. You will also need 3 tablespoons of butter and vanilla extract. Sift the flour, salt and baking powder. Microwave the milk and add butter, and then let cool. Beat the eggs and add sugar as you whisk before you add a few tablespoons of warm milk. Combine the milk with the egg and butter and stir in the flour mixture before adding the vanilla extract. Pour the batter into a small pan that will fit in your toaster. Make sure the surface has been sprayed with oil to avoid the batter from sticking. You can also use a cupcake pan as a substitute. Bake at 350 degrees Fahrenheit or until the toothpick test says that your cake is done. Your cake will cook in half the time if you use a muffin or cupcake pan.

Grilled cheese sandwich

You can avoid having to wash pans and dishes if you opt for making grilled cheese sandwich on the toaster. You can use whole wheat bread sandwiches for healthier fare. Flip the sandwiches when one side gets brown to avoid burning any side.

Tortilla pizza

This is a quick Mexican twist to the pizza that you can do in less than 10 minutes. You can make your own tortilla or buy a 10-inch ready made version from the local store. Slather a cup of marinara sauce, followed by a generous sprinkling of any kind of cheese you have on hand. Cheddar or reduced fat cheese are great options if you have them. Sprinkle slices of onions, tomato and sprinkle some more cheese before popping everything in the oven.

Roasted asparagus

This is a healthy way to infuse more flavor into an ordinary vegetable. Use thick asparagus to avoid wilting. Chop off the bottom and lay your asparagus flat on the pan over a dry baking sheet. Drizzle oil over the asparagus before sprinkling kosher or regular salt. Follow this up with a generous sprinkling of black pepper for added flavor. Pop it in the oven that you preheated to 425 degrees and wait 10 minutes or until you see the outer surface turning brown.
